My childhood is filled with memories of my grandmother creating delicious desserts and treats for her grandchildren. Now, my mother re-creates this heart-warming dish for my own children.

This recipe takes around 45 minutes from start to finish. Most of the time is just waiting for the milk to evaporate to create the creamy consistency of rice pudding.
The key to this recipe is the egg. I have tried other recipes that leave out the egg and substitute for shorter-grained rice to thicken up the pudding and although it will work, I just personally feel like the taste is not the same.

- 4 cups milk
- 1/4 cup sugar
- 1/2 cup Carolina Enriched White Rice
- 1 egg
- 1 tspn vanilla extract
- cinnamon

- In a 3-quart saucepan, add milk and sugar. Stir to combine and simmer for about 5 minutes.
- Rinse rice and add to warmed milk. Bring to an intense simmer and stir often. Continue cooking for 35-40 minutes. Some of the milk will evaporate. You are looking for a thin liquid consistency. The mixture will thicken and continue to thicken as it cools.
- While mixture is cooking, beat egg and vanilla extract in a bowl.
- When the mixture is done cooking, should have the consistency of a thin oatmeal, remove from heat and add the beaten egg and vanilla extract while stirring quickly until well incorporated.
- Pour the pudding into individual sized bowls or a large serving dish.
- Add cinnamon on top and enjoy!
