Delicious, Creamy and Easy Rice Pudding

One of my favorite comfort foods is rice pudding. This delicious and easy recipe makes one of the creamiest and my mom's favorite treats to make for her grandkids.

Ingredients
  

  • 4 cups milk
  • 1/4 cup sugar
  • 1/2 cup Carolina Enriched White Rice
  • 1 egg
  • 1 tspn vanilla extract
  • cinnamon

  • In a 3-quart saucepan, add milk and sugar. Stir to combine and simmer for about 5 minutes.
  • Rinse rice and add to warmed milk. Bring to an intense simmer and stir often. Continue cooking for 35-40 minutes. Some of the milk will evaporate. You are looking for a thin liquid consistency. The mixture will thicken and continue to thicken as it cools.
  • While mixture is cooking, beat egg and vanilla extract in a bowl.
  • When the mixture is done cooking, should have the consistency of a thin oatmeal, remove from heat and add the beaten egg and vanilla extract while stirring quickly until well incorporated.
  • Pour the pudding into individual sized bowls or a large serving dish.
  • Add cinnamon on top and enjoy!

Notes

Pudding is best served warm or cold on the day it is made. It can be refrigerated for three days.
