One of my favorite comfort foods is rice pudding. This delicious and easy recipe makes one of the creamiest and my mom's favorite treats to make for her grandkids.
In a 3-quart saucepan, add milk and sugar. Stir to combine and simmer for about 5 minutes.
Rinse rice and add to warmed milk. Bring to an intense simmer and stir often. Continue cooking for 35-40 minutes. Some of the milk will evaporate. You are looking for a thin liquid consistency. The mixture will thicken and continue to thicken as it cools.
While mixture is cooking, beat egg and vanilla extract in a bowl.
When the mixture is done cooking, should have the consistency of a thin oatmeal, remove from heat and add the beaten egg and vanilla extract while stirring quickly until well incorporated.
Pour the pudding into individual sized bowls or a large serving dish.
Add cinnamon on top and enjoy!
Notes
Pudding is best served warm or cold on the day it is made. It can be refrigerated for three days.
